Baked Taco Bowl:
We actually ate this two nights in a row. What is more fun than tacos? Taco Bowls!!! I microwaved the flour tortillas until they were soft and malleable, draped them over a metal can, gave them a spritz with some olive oil spray- then into a 450 oven for about 5 minutes. They came out crispy and perfect.
Then we inserted our favorite ingredients: homemade refried pinto beans (not really fried at all, just warmed up and mashed,) tofu/ corn mixture, romaine lettuce, homemade pico de gallo and guacamole. Delicious!
